I love to entertain and cook homemade meals. I come from a family of cooks. Both my grandmothers are amazing cooks and passed down some amazing Mexican recipes. We always cooked everything from scratch. I have experimented in the kitchen and have collected some amazing recipes through my travels. Some of the dishes below are from recipes I have collected and some are dishes I have created. I hope you enjoy.

Stuffed mini-peppers with ricotta, Shrimp fetticine in spicey marinara, and garlic bread
Breakfast burrito (scrambled eggs with grilled chicken over a bed of baby spinach and hummus spread)

Baked orange chicken stuffed with oranges, garlic, and onion. Carrots and potatoes cooked in the broth

Tacos de luenga (topped with chopped onion and cilantro) spanish rice and black beans on the side
Tres golpes ( eggs sunny-side up), fried cheese, and mashed plantain with pickled red onion

Empanadas – stuffed with ground meat and veggies
Authentic jalapeno poppers – stuffed with cheese and chorizo
All organic meal. Fresh marinara sauce with roasted tomatoes, garlic, onion, and rosemary. Accompanied with broccoli salad with Greek yogurt, sunflower seeds, craisins, and dash of agave nectar.
